Black-Eyed Pea and Corn Salsa | Collab with Life with Rosie

Hi, there! My name is Chelsie and I blog over at Life with Rosie, a blog dedicated to food, reading and my golden retriever pup, Rosie. I'm super excited to be on The Kindhearted today to share one of my favorite snacking recipes with you all today.

blackeyed pea salsa

I first experienced this salsa last Thanksgiving when my husband's aunt made it for our appetizer afternoon. I thought I had died and gone to heaven! This is not a spicy salsa at all, but more of a zesty salsa! I know that black-eyed peas may sound disgusting, but I promise that they work really well in this salsa. It's super easy to mix up and is great for parties, potlucks and general snacking. I love that it's relatively good for you, too!

In order to make this salsa, you will need:

1 can of white kernel corn

1 can of black-eyed peas

4 roma tomatoes

1 bunch of cilantro

2-3 avocados

1 bottle of Zesty Italian dressing



Instructions:

1. Chop the tomatoes up and mix together with drained corn and drained black-eyed peas in a bowl.

2. Chop up cilantro and mix into the mixture.

3. Add in half of the bottle of Italian Dressing and stir to mix in.

4. RIGHT BEFORE SERVING: Chop up avocados and mix in.**

**Avocados can go bad fast without the pit, so if I'm planning on eating the salsa over a few days, I will only chop one at a time when I eat it and gently mix it into the top. It does make a little extra work to chop an avocado every time you want to eat it, but it keeps it fresh and yummy!

  4. Yum! I would probably leave out the tomatoes, but adding in the corn and black-eyed peas is such a good idea & this might be a way for me to sneak in a little avocado since I don't typically care for it :)
